I used to really like the Bob's Redmill Brand Buttermilk Pancake Mix but with Veg's dairy issues, and my new found dislike to store bought Buttermilk (after reading the ingredients) I've had a hard time finding other pancake mixes that I like just as well.
The Vegan Lunchbox Cookbook has an Oatmeal Vegan recipe and it is pretty good, but still not what we are used to. Thanks to the Vegan cupcakes take over the world cook book I have learned how to modify buttermilk recipes by curdling Soymilk with Apple Cider Vinegar.
And I decided today was the day to make the PERFECT Pancake.... So I dug through all my Non-Veg cookbooks to see if I could find something Modify-able....
I found a very Basic 6 ingredient recipe in an old Better Homes and Garden cookbook.... Then went to town on my modifications.... OH MY YUM... Were they good!!!! I even added a little Cocoa because Veg wanted them to look choclate'ish.. And I think that added to the flavor, so I'll keep using that and thats why you'll see it in the ingredient list below. We also added ground flax seed for all its nutrients. The second batch I threw in some of our fresh picked blueberries (that I had frozen last week)
So I guess you could call these "Vegan Choco Flax Blueberry Banana Buttermilk Pancakes" ha ha....

Here is the recipe... And by the way it made 13 and there are only 2 left. We only have 3 people living in our house. You do the math! *smile* You can modify this to fit your needs as I did. Using different flour could make these wheat free, or using different sugars, grains, nuts etc. can add more texture and nutrients, etc.
And in case your wondering what I modified, I increased the flour, changed the sugar type, used banana instead of eggs, and made my own Veg friendly buttermilk, also the flax, cocoa, and berries..... I have realized using these simple changes, that I can make almost anything I want in a Veg friendly way.... How exciting!!
1 1/2 Cup Flour
2 TBS Turbinado Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 1/2 TBS or so- Ground Flax
2 TBS give or take - Cocoa Powder
1 mashed banana
1 CUP Vanilla Soymilk
2 TBS Canola Oil
1 TBS Apple Cider Vinegar
Mix the Soymilk and Apple Cider Vinegar then set aside to curdle.
Mix all the dry ingredients in a bowl
Mash the Banana in a separate bowl, then mix in the remaining wet ingredients (including curdled milk)...
Mix together the wet and dry ingredients.
For more variety, Add Choco Chips, Peanut Butter chips, Frozen berries or nuts... and mix again....
I cooked mine on an Electric Skillet (greased with vegan margarine) at about 375 degrees.....
They cooked real well and were easy to flip and could easily tell when done.....
