MUFFIN TIN DINNER
Tonight I was making Hubby and I a Mexican Bean Dip dish that I new Veg didn't like. And on the counter I saw our Muffin tin freshly cleaned from the last batch of cupcakes... At that moment the light bulb went off and I remembered seeing those Muffin Tin lunches that many bloggers are posting about these days...
So I filled up each and every part of the tin with something from Veggies (peas, carrots, celery, peppers), to Fruit (grapes and banana), to dessert (vegan jelly beans), chips and salsa, Soy dogs and ketchup.... If we had it in the house, it was in the tin...
When Veg saw his dinner, he started Squealing "Dad Dad, you gotta see this, its the coolest dinner ever"...
Hubby came in to see, and Veg was so proud... "Look at all these choices, I've never seen such a thing" ha ha... He LOVED it....
Hubby whispered "I think you out did yourself this time" *smile*
To my enjoyment, Veg ate everything Green and Red first, then the soy dogs, and then stopped to say "Look, I emptied so many buckets"
He finished about everything, and then went for the Vegan Jelly Beans.. Hubby finished the blue corn chips with his bean dip, and there were a couple carrots left and a little salsa and ketchup left.... But other then that, I'm calling this a good dinner.
Surely I will be doing this again!! How Fun!

Whats a vegan Jelly Bean?

A Vegan Jelly Bean is a Jelly bean with out Gelitan... Do I need to explain again what is in Gelitan?
Not to mention they have no dyes, artificial stuff or anything yucky! And they taste soo good!
