VEGAN GARLIC BUTTER
After learning a few basic things over the years, I can turn almost anything in to a Veg friendly recipe.
By Mixing a little Apple Cider Vinegar in to Soymilk for example, I can make Buttermilk... With Buttermilk, I can make Buttermilk Pancakes, Blueberry Scones, Cupcakes, Waffles... you get the idea!
And by the way... Have you ever looked at a carton of real buttermilk to see the ingredients?? EWWW!!!
As I was saying....Swapping a Banana for Eggs, I can make muffins, pancakes, cookies
Swapping some Ground Flax with water, I can also replace eggs in some other very yummy meals.
Mashing white beans in the food processor makes for a great Fettucinni Alfredo.
Ah, and tofu... my friend!!! Everything from Puddings to Ricotta like cheese... This stuff can be turned in to ANYTHING! I've made a Vegan Spinach Artichoke Dip, a Vegan Cheese Ball... You name it and I've tried it....
Funny thing is, I can't stand to cook... I've never been any good! If a recipe has more then 6 ingredients, I'm pretty much not going to make it... So you KNOW if I make something then it MUST be easy.
Well Insert the Magic Bullet... This thing is way cool for smoothies... But lately I made some Guacamole.. With all fresh ingredients... and it was SOOO good!
Then a couple days ago, Against Hubby's Judgment, I gave Garlic Butter a try... no recipe, I just tossed in some stuff... Veggie Buttery Spread, Toffutti Cream Cheese, garlic clove, garlic salt, basil and oregano, some seasoning salt...then mixed it all up in the Magic Bullet.... It tasted good that night.. But stored in the fridge, it tasted even better 2 days later!
Ha, and he said I would never be able to match the stuff at the restaurant we go to... But after today he was asking for more. So was my little Veg. They both devoured their french bread and Vegan Spread, leaving me nothing but the heal *sigh*
The trick is to let it sit two days... So I'll be making more for sure... and just allow it to stay in the fridge for a while. I'm sure I could make a huge batch and just keep it in a tub for when ever we need it.
YUM! How fun to make things Veg friendly. Especially when its easy!

Sounds yummy! You should post some of your recipes! I'm making some black bean/garbanzo bean hummus today... also much better after it sits for a while. But then it makes a really tasty dip for veggies and also makes a great spread for sandwiches.
