For lunch today, I had all the ingredients for a Wrap and then I realized, I didn't have the wrap. Not to mention a wrap isn't so Raw... I could make Sushi, but didn't want to spend hours on the rice... (and again, not so raw!
Then I remembered seeing on someone's blog where they used Nori for this purpose... SOOO Sorry, I searched and searched but I can't remember where I saw it to give credit.
Anyway, this is what I did...
Ingredients:
Spread on the Avocado, chop chop and put on the veggies, sprinkle with dressing (Apple cider vinegar and Olive Oil base with seasoning and garlic salt)... lay on fresh basil....
Then Roll it up:
Then Eat it!! Mmm Good!
Verdict:
I liked mine so much that I made a second. Hubby said it needed rice or "REAL" tortilla but he ate it. Veg loved his at first, and then I think the seaweed was too much. He ate all the innards and asked for some cut up Avocado pieces to eat plane, but didn't eat the rest of the Nori.
He said if I made smaller bites he would take them in his lunch box. I'll be doing these more often, I'm sure!

Mmmmmm! I just had one similar to this at a raw food Deli near here. So good!
Next time you are in town you should check it out. It's called Red Pepper Deli and it's in downtown Northville. Their raw taco's are to die for. :)

OOH, thank you Melissa! I will def. go there on our way to or from one of our Cider Mill Excursions. I know we spent a lot of time in Northville last Fall...
I'm thinking we'll have to stay a full week to fit everything in... But then my Mom probably wouldn't mind that a bit! :-)
