Veg wanted Cucumber Salad.
I just happened to have cucumbers from the Farmer's Market BUT didn't have any coconut yogurt. So I decided to use the Hemp milk... And this ended up as a mostly raw vegan treat, that we both really liked:
Hemp Milk, Chopped Onion, Cucumbers, Dash of Wine Vinegar, Dill, Seasoning Salt, Agave Nectar and Garlic Salt.
Just mix all together and pop in the fridge to absorb all the flavor. YUM!
Then we grabbed some potatoes from the garden:
Boiled them for a bit... And made some Vegan Potato Salad For lunch this week.
The dressing:
Olive Oil, Mustard, Apple Cider Vinegar, Garlic Salt, Lemon Pepper and Chives.
We mixed the dressing, added the chopped potatoes, mixed all together and put in the fridge.
Veg helped mix the dressing, find the potatoes in the Garden, plus wash and then chop them.
He was Quite proud of his Veggie Goodness... "Mom, are you sure this is going to taste good?"
OH YES!!! IT WILL TASTE GREAT!!!!!!!!! *smile*
Did I mention this is a good food week.... I keep making myself hungry!
