As mentioned earlier I took a Scone class at Magnolia & Ivy Tea Room while in Sandestin and was able to keep the recipe. It was pretty simple with just a few ingredients. The tricks are all in how you handle the dough/batter, the type of pan you use and other little helpful things that she filled our heads with. But the simple ingredients were also not so Veg friendly... and although we ate every scone we made, I still kept thinking that when I got home, I would try to Veg-inise this recipe...
Tonight, Hubby said "Please make us those scones"... He brought home a container of buttermilk and when I read the ingredients, I was a tad grossed out.... Lets just say, its not even Vegetarian, let alone Vegan...With Gelatin made from animal feet as one of the many ingredients, I quickly decided I'm going to use my own stuff....
So I made Buttermilk by combining Soymilk and lemon juice. (It looks gross but it really worked), I used Unbleached White Self Rising Flour (with non-aluminum baking powder), And turbinado sugar instead of the white stuff... I did use Real Organic Butter (only because my veg kind is empty) and followed her recipe for amounts and other directions....
Oh - I also don't have the tool to cut the butter in to the flour, so I used a Potato masher.. It worked very well. And I didn't have a cookie cutter to make the pretty hearts that she made, so I just dropped scoop fulls.
Anyway, with all my shuffling of this recipe, it came out VERY GOOD!!! And I'm sure I will be making them A LOT MORE!!!!! with so many different options... Fruit, Frostings, Etc. I'm starting to think any thing can be made Veg- Style if you give it a try!... Do you have any good converted recipes??? If so please comment......
