Ice Cream Cakes are a yearly tradition in our house, but since we are doing the no-dairy thing this year, I decided to try a Vegan Version.
Hubby said it was the best cake he's ever had and that truly is saying a lot!
I used the Vegan Cupcake Recipe but instead of cupcake tins, I used individual star shaped tins. Then cooled the star-cakes. And stuck them in the freezer.
When they were cold enough, I scooped on some Vegan Ice Cream and then added another star cake to the top. Rolled the whole shebang in some sprinkles for color (which you can't see in this picture), and stuck it back in the freezer till we were ready to eat them.
Of course I made one for Veg also because he said "YOU CAN NOT HAVE A BIRTHDAY WITHOUT A CAKE"
Turns out, Hubby thought this was the best Birthday EVER! And had only good things to say!
I must admit, those star cakes were pretty darn good!
