This was exceptionally good today... I make Ziti at least twice a month. I just love it. But today I experimented by adding some baby food jars of veggies... This delicious pasta is Not Vegan because I did sprinkle some organic shredded cheese on the top, but that isn't necessary. And Lil Veg ate his before adding the cheese.
Anyway, this was my sauce...

- Blended tofu w/ lemon juice, agave nectar & basil
Mix that tofu concoction with the rest of these ingredients (sorry, don't have amounts... you'll have to add what tastes good to you):
- A Jar of organic veggie Spaghetti Sauce
- Apple Cider Vinegar
- Agave nectar
- organic baby jar of spinach and carrots
- organic baby jar of sweet potatoes
- Lots of Italian spices
- Garlic Salt and Powder
- Sprinkles of Kelp Powder
- Fresh chopped garlic
- Fresh cut Orange Peppers (normally I'd add more fresh veggies, but this is all I had)
Mix the sauce with cooked Ziti noodles, sprinkle with cheese if desired and then bake in the oven until bubbling and crunchy on top....
Double, Triple, Quadruple YUM... And VEGETARIAN.... *smile* Gotta Love that!
