We had a friend over from Veg's school that has quite a few allergies.... Actually I think the little guy has more food allergies then he does safe foods and they all manifest in his skin.
Really Really makes you grateful for skin that doesn't itch. I can't imagine living as he does in such a constant discomfort zone.
But I couldn't have a delayed B-day celebration and not have more cupcakes.. So I made a batch from the "Vegan Cupcakes Take over the world" Cookbook and used Spelt Flour instead of other types. (The Spelt was OK'd by the parents) And the cupcakes were great. We couldn't really tell that it was a different flour variety and the kids were both perfectly happy.
I think I may use the Spelt more often... I realized that I'm moving more toward that direction anyway, with tortillas and pizza crust... So why not Cupcakes?
