I've been reading a lot in my courses regarding Calcium containing foods to find Collard Greens pack quite a punch. Not to mention they pack a whole lot of nutrients.
So when I saw some beautiful looking Collard (or elephant ears as Veg calls them) at the store, I couldn't help but grab a bunch.
Of course once home, I wasn't quite sure what to do with them. Which is when I remembered the recipe from Vegan Lunch Box.
You chop them in to little ribbons:
Pop them in a pot with Onions, Sugar and Water to cook for a bit:
Mix up a vinaigrette salad dressing with some seasoning and Voila!

Turns out, I really like Collard Greens. I've had them before, but even better this time.
