Vegan Gluten Free Single Serve Cookies

Another Vegmom Single Serve Experiment...

Vegkid wanted dessert and I didn't have anything pre-made to offer him.  Also knowing we had somewhere to be in 25 minutes, baking something was not likely to happen.

Then I decided to have some fun.  

Mission: See if we could make a single cookie in under 15 minutes start to finish.

Steps:

1. Popped on the oven to 350
2. Grabbed a tiny bowl, and threw in some GF All Purpose Flour to fill it up 1/2 way
3. Added some coconut flour
4. Added a little coconut sugar and little turbinado sugar
5. Some baking powder 
6. Sprinkle of sea salt 
7. Grabbed a Small mixing bowl and poured in a little non-dairy milk
8. Some apple sauce went in the mixing bowl along with vanilla 
9. Poured dry ingredients in to wet ingredients (could use one bowl next time if I planned better on the size)
10. Mixed in Choco Chips
11. Scooped on to foiled baked sheet (made 3 cookies instead of one)
12. Baked for 10 minutes and check for consistency... 

Results:

Three Ooey Gooey Chocolate Chip Cookies in under 15 minutes, start to finish!

Next time I'll add some mashed banana, use baking stone, and tweak quantities of everything else.  (and write down measurements) But otherwise, these were actually really tasty.  In fact Vegkid has been talking about them ever since. 

At this rate, I can have entire fresh prepared meals on the table every day (Veggies, Fruits, Main Course and even Dessert) in under 30 minutes.  

 

 

 

 

 

 

 

 

 

 

 

 

Happy Herbivore Pumpkin Bean Bars

I happened upon this HH recipe over the weekend and couldn't wait to try it:

Happy Herbivore Low Fat Pumpkin Bean Bars

Part Cookie Bar, Part Pumpkin Pie, Part Blondie/Brownie... But all Good!!

I added a couple choco chips (Shhh, don't tell)  And threw in a little extra Cinnamon (since I made my own pumpkin pie spice mix)

But otherwise, I didn't modify this much.  The next day made this taste even better, if you can wait that long.

Vegkid asked for this for his breakfast and I was OK with that!  Starting the day with Pumpkins, Beans and a Green Smoothie.. what more could a Mom ask for!  *smile*

MY RECIPE JOURNAL

Wow I got tons done today..  Straightened up an area of the house that was bugging me, 3 giants loads of wash, cleaned and put away.. All our finance stuff up to date, a card for NeeNee, and even all our Christmas gifts ordered for the kids in our family... 

And and and.. I updated my Recipe Journal with all my recent Raw or Vegan finds.....  What is a Recipe Journal you may ask??   I shall show you... 

There, Now you know what it is?? hee hee....

OK, so a couple years ago, I decided it was a PAIN to go through all the cookbooks to find that one favorite recipe that I forgot which cookbook it was in. 

OR going through all the pages of a cookbook to find the one page I was needing...

OR going through a 1000 sheets of paper printouts to figure out what I felt like making that day.... 

OR digging deep in to the hole of my brain to remember how I made that one little thing... that I really wanted but couldn't remember all the ingredients I used.

And I couldn't stand my cluttered cabinet FILLED with all this stuff...

Surely you've been there and know what I'm talking about....

If not then ignore this post and move on.... *smile*

Well it was such a waste of time and I started to just stop looking and got in a food rut and got annoyed.... Until I thought up a Recipe Journal.... Think of a Scrapbook for Recipes.

The beginning is full of a list with all my favorite foods that don't require recipes, so I could see at a glance when I needed inspiration.  And then the next pages have the names of each of my favorite cookbooks and page numbers of the recipes I like out of those books:

Further in to the book,  I have cut out the pieces of recipes that I printed from the web or from emails etc. And folded them up and taped to pages to fit in the book.  All other papers got recycled and OUT of my cabinet.   The ones that made it in to my journal are only tried and true and likable... So it contains our own rating system.

And then there are the recipes that I try and concoct or make my own.  There are many of these... And some pages are really messy, where I add more ingredients or take away as time goes on. 

These are the ones, that if I get hit by a bus.. Hubby could still recreate all their favorite things...

And so now you know what a Vegmom Recipe Journal is...

My journal is pretty full as you can tell... Now I'm adding all the Raw food stuffs... and its getting really full... I may need another journal:

But my recipe cabinet is well organized....  And I have no Recipe Stress...  Yay!

And a very productive day, Double Yay!!

FLOUR CUPCAKES

 

Oh they sure do look pretty.... But I dare you to try one!!  YES - I forgot a very important ingredient...

SUGAR!!!  How can a person possibly forget to add the sugar while making cupcakes??  Well this person could.. And they aren't just ordinary cupcakes.... OH NO, they were supposed to be in celebration of Jesus's Birthday... Per VEG, we needed to have cupcakes today.  And I don't ever turn down the need to make a batch of delicious Vegan Cupcakes....

And I forgot to add the SUGAR!!  So this will forever be known as the Christmas with the Flour Cupcakes... Because they pretty much tasted like a spoon full of four.  But they sure did look pretty!! 

Hubby suggested I don't throw them away and just add frosting... That actually did the trick and my Sweet Veg said they were the best cupcakes ever.... hmmm?  Maybe he doesn't like the extra sugar?  Could be possible...  He got a candle to blow out and the boys sang Happy Birthday to Jesus.

It was a nice way to finish the day.  Even if I did forget the Sugar!  Goodness Me!!!

VEGAN PEANUT BUTTER AND CHOCO CUPS

I know these don't look pretty, but MAN DO THEY TASTE GOOD!!  And I made them..... Why is that a big deal???  Because I'm a girl that thinks baking is a chore, that came from a Mom who will burn a pre-made cookie, just by looking at the oven.... 

And yet, last night I made these Peanut Butter Chocolate Cups...  That Veg can eat because there aren't ANY trigger foods and no allergens for either of us....  I'm quite happy!  And did I mention, they are Vegan..... YUM!!  I found the original recipe here.   then Vegan'ised it !!  Enjoy!!

SILLY APPLE PUMPKIN DAY 2008

And so our Second Annual Silly Apply Pumpkin Day of 2008 comes to a close....  Veg ate his dinner at about 7:30 excused himself from the table and said "I'm going to bed, its been a long day"  AND HE DID!!!  Out cold... Fast Asleep.... No Muss No Fuss.....  But what did we do on this day you may ask??

First, there was School.... The kids got to carve a Pumpkin.  When parents arrived they auction off the pumpkins... Its all for fun and all proceeds go to the school... Did my guy CARVE a Pumpkin???  NOooooo!  He didn't want to "RUIN" the pumpkin!!  Wish I would have known that at 10pm last night when I was running around the city looking for a kid friendly carving tool..... And so he painted it!!  A beautiful masterpiece.  Notice the skeleton in picture 2:

Hubby brought Veg home after the auction, while I went back to work.  Upon getting home, I find my little Vegman in his usual costume attire... the same thing he's been for the last 5 years.... and I gave him his outdoor surprise...  The silliest pumpkin of ALL time... One that BOUNCES!!!  Really Really High!!  In fact so high, that it took off down the street and I was running very quickly to catch it before it got slaughtered by on coming traffic.  That was fun!!

And of course there were Leaves... Lots and Lots of Leaves... And finally one of my trees decided to turn pretty before the season ended:

After raking and jumping, raking and jumping, then playing our version of Dodge Ball and blowing bubbles.... OOH forgot to write about the bubbles....

While out last weekend, someone at a store gave Veg some bubbles.  Hubby wouldn't let him have them because they were "Halloween" and Hubby doesn't want Halloween celebrated...  Well... I say they are BUBBLES......  So tonight, I wrapped a little jar with happy pumpkin and apple stamped paper, then made my own bubbles....  Dish soap, Water and Sugar... I made it really really really soapy, so the bubbles were GREAT.  We found an old wand, and blew the most wonderful bubbles.

Ok, so after bubbles, leaves, bouncing ball and fun...  We came inside.....Bobbed for Apples!  Veg is much better this year then last year, but we all had some great laughs.  Hubby got his on the first try... SHOW OFF:

Then it was hand out candy time (to each other)  The candy I chose for Veg, was Organic all natural Candy Canes.... Afterall,  What is more silly then Christmas Candy in October???  Just love this box!!

Veg was soooo excited "Thanks Mom, this is the best candy ever"  BUT - he says... "Remember last year when you made me a really nice bowl for my candy?  Why didn't you do that this time?" 

Well Phooey!!  He remembers the one thing I forgot.... So I get him in the shower then run around to find a decoratable container...  Thanks to my Crafty Friend.. I had some recipe boxes lying around...

One of them is now officially a Silly Apple Pumpkin Box:

Eventually it is time for dinner.... I was so busy with everything else, that I didn't bother to make a good dinner, but I had to make something that was Silly! and something that was Apple'ish..... 

Fried Apples did the trick, although didn't come out as good as I imagined they would, Veg really liked them... He said they were chewy like gum.. ha ha... Not exactly the texture I was going for:

I also made these.. Peanut Butter and Chocolate bars but they are cooling in the fridge right now...  Those aren't really Pumpkin or Apple'ish, but they sure do look good!!  ha ha... And they will give Veg some "Peanut Butter Cup" type candy when he wakes in the morning, to show him that not going trick 'o treating isn't so bad after all....  Ooh is he excited for those.. (so am I, by the way)

And so our Day comes to an end!!  My Veg Man went to sleep as happy as can be and just before heading off he says.. "I know we don't celebrate Halloween, but I'm sure glad we celebrate Silly Apply Pumpkin Day"

Sheww... Mission Complete!!!

VEGAN BLUEBERRY MUFFINS

I found this recipe on the Vegcooking Blog and couldn't wait to try it.  Especially because I still had some frozen blueberries from our picking adventure.

You'll notice by looking at the picture... that some of them don't have blueberries inside.. Well that was because after we got it all mixed I started pouring the batter and realized "I forgot the blueberries"

Veg and I agreed to keep some that way, because he likes them plain anyway...  So I could say "I meant to do that"... *smile*

This recipe was so easy, I think a total of 6 ingredients... I added a little ground flax for the extra nutrients, and I'm sure I can add other things next time to make variety.  But these were a real hit.  Hubby and Veg loved them....  Even the batter was good (shhhh, don't tell)...

I lifted one up and pealed the paper down just so you could see the total tasty goodness......  Also Veg loved mashing the bananas and helping to mix the ingredients... Fun and Easy!!  AND TASTY!!  Yummmm....

WHEAT FREE AND VEGAN CUPCAKES

We had a friend over from Veg's school that has quite a few allergies.... Actually I think the little guy has more food allergies then he does safe foods and they all manifest in his skin.

Really Really makes you grateful for skin that doesn't itch.  I can't imagine living as he does in such a constant discomfort zone.

But I couldn't have a delayed B-day celebration and not have more cupcakes..  So I made a batch from the "Vegan Cupcakes Take over the world" Cookbook and used Spelt Flour instead of other types.  (The Spelt was OK'd by the parents) And the cupcakes were great.  We couldn't really tell that it was a different flour variety and the kids were both perfectly happy.

I think I may use the Spelt more often... I realized that I'm moving more toward that direction anyway, with tortillas and pizza crust... So why not Cupcakes?   

CUPCAKES?

Hubby is now as addicted to my Vegan cupcakes as I am and actually helped me make a batch tonight.  He's been asking for 2 weeks and I couldn't find my mixer.  He said "I'll hand mix them if you'll make me a batch of those cupcakes" 

I could just picture him stirring until his arm fell off just to get these cupcakes.....  And then we found the hand mixer.... Veg came running in asking to help.  So there we are, all three of us making cupcakes in the Kitchen when the phone rings.  It was my MIL (mother-n-law)....

"What are you doing" she asks

<Making Cupcakes>

"Cupcakes?  for his school?"

<Nope, just making cupcakes>

"For the house?"

<Yup>

"Your really, just making cupcakes to eat at your house?"

<Yes we are>

"Well OK then"

Now I'm not sure why she was so surprised that we would make cupcakes just to eat at our house.. but she probably hasn't been in touch with the latest cupcake craze that is sweeping the nation... Ya No, its not just my house... NOPE... There are entire bakery's and web businesses and clothes and crafting supplies and books all dedicated to the VERY YUMMY CUPCAKE.... And the fact that I can make VEGAN ones when ever I wanna... Is a good thing!

I didn't have the heart to tell her that this was probably the 100th batch I've made since my sweet baker friend got me started with the Vegan Cupcake Cookbook....But I guess some secrets are better left untold!

VEGAN BROWNIES

I made these brownies last night from the "101 things you can do with tofu" book!!  I wasn't sure how they would turn out because I didn't have any silken tofu in the house only firm regular tofu.  So I had to add extra water, extra oil and extra apple sauce, but they did come out.  And they are actually quite tasty.

Veg, gave them a big thumbs up tonight when he had two chunks full.  Of course I don't mind because they are pure protein with the tofu laced inside....  Add nuts for even more protein...  They don't really taste gooey brownie'ish.  More like thick cake... But still Yum, none-the-less.  And Vegan!  Can't beat that!

SPINACH AND ARTICHOKE

Oh, this was soooooo GOOD!!!!  My first recipe from the "101 things you can do with tofu" book that my friend baught me for Christmas.

This recipe book is not  necessarily a Vegetarian or Vegan one, but every recipe contains Tofu.  I have to skip past the eggs and cheese or substitute. 

But this Tofu dish I had to try and did use some Organic Mozz cheese.  Seriously it was soooooo good!  Hubby and I ate almost all of it last night, and the rest today for lunch.   Did I mention it was sooooo good!  *smile*  It was even worth the major burn I got in my mouth for getting a bite while it was too hot... Whoops!  But soooo worth it! 

NEW YEAR - CLEAN CABINETS

It's a New Year, don't forget to check the dates on all your spices, flours, etc. 

My Rule - If it doesn't have a date, but I can't remember when I baught it or when I used it last... Then Its Expired by default...

And Obviously all the out-dated items go away... I know its wasteful but unfortunatly is a necessary Evil....  And actually when going through my cabinets today, I was surprised how much had expired...I now have some pretty clean cupboards though, which is a good thing.  And throwing that stuff away, reminds me to be more careful this new year...  Only buy what I need and when I need it.

I started by putting a piece of paper and pencil on my counter.  Every time something is empty or missing, I add it to that list, so I'm not trying remember a week later and there is no possibility of getting duplicates.  If its not on the list then I won't buy it.  I'm on my 2nd week of this new technique, so we'll see what the rest of the year holds!

VEGAN TACO FEAST

A few years ago we set the tradition in place to have a Mexican Fiesta every Christmas Day... We (or I) decided this was a good idea because I could do Veg food, through out the day that we could munch on.  There was also plenty for our Pickiest Veg to choose, and It would be easy for hubby to toss cooked chicken in his.  If by chance we have company over, there is always enough to eat.  So it was a win-win for all....  Another good reason was, I could cut all the veggies early,  have lots of food set up through out the day for everyone to munch and I didn't feel like I was cooking all day.

Well this year was, but wasn't an exception!  We didn't have an all day fiesta and didn't really have lots of choices.  We also didn't have any meat, sour cream or real cheese... thrown in... WooHoo!!!  Instead we made Vegan Tacos that were soooo yummy!

I also forgot to buy tomatoes.... how can you have tacos with out tomatoes?  By adding chunky salsa of course!

For cheese we used Soy Cheese Sticks and shredded them!  YUM!

For Sour Cream I mixed the following in the Magic Bullet:

• 1/2 container of firm tofu
• Some agave Nector
• Some Olive Oil
• Some Lemonade (I used all the lemon juice, so lemonade had to do)
• Kelp Powder (or sea salt could be used)

When that was perfectly creamy, I mixed some salsa in with a spoon and it tasted sooo good... I just made this up because I wanted hubby to have something to replace his sour cream and realize that Vegan things are just as good.  I liked the recipe so much though, that I've added it to my "keeper" book, to make again.

Veggies were cooked in a skillet with some Lemon Juice, a little water,  and Fajita Seasoning (found some without MSG) Orange Peppers, Carrots, Onions, Garlic and Spinach.

Beans were canned refried black beans, mixed with some veggie meat, lemon juice, and mild taco seasoning and warmed to perfection in a small pot.

Taco shells were crunchy this time and we used the Blue Corn Chip variety!  Yummmm....  Baked for about 3 minutes and then add the fillings above... We also had some shredded lettuce to throw on top.

Hubby helped cut the veggies and lettuce by using a Pizza Cutter!  Yup, I said Pizza Cutter!  All our knives were dirty, so he grabbed that thing and went to town.  I think he even had a little fun!

Veg helped shred the soy cheese... And while all this was being made, I cooked up a potato for Veg along with two Corn on the Cob Wheels (fresh frozen from our in-laws October visit).... 

I have no pictures to share my creation, but imagine the corn wheels for eyes, the potato cut as a smile and a carrot for the nose!  This was a  huge hit, and he ate up every piece, including making his own taco full of potato pieces, soy cheese and carrots.  He decided after this that he does like tacos as long as he can make his own.  Which I'm very happy to oblige.

To top off the rest of our delicious Vegan Cooking day, I made some Choco Chip Bars from the Soy Cookery Cook book.  Triple Quadruple Yum!!!!!!!!!!!!!!

Not only did I get a 3 hour nap... (yup I said 3 hour nap)  But I also got some Delicious food, some fun gifts, and TONS of play time with the Vegman.  We all helped make the food and all helped clean it up!   Can't beat that for Nuthin!!

VEGMOM GIFT GUIDE

The gift giving season in our home has sort of been a month long process.  When my Mom was here we got some gifts.  While going to our friends holiday gathering, we received gifts... and boxes have been arriving on our doorstep from everyone else....  So I must share some of  the unique gift hi-lights of Christmas 2007!!  Sorry, in advance if I forget anything...

Bananagrams - Its like Scrabble but with out the board, points and brains.   Our friend got us this and it is actually much harder then she led on... Oh Yes, she said you didn't have to be smart to play, so I thought we fit that category very well.   However, it is quite challenging.  Hubby and I played tonight and it took over an hour to clear the pile and make words.   I did win this first round, by the way... must throw that in!  *smile*

101 Things to do with Tofu - This too was purchased from my same friend who knows that I'm always looking for fun (easy) recipes.  This book has over 100 easy recipes that even I can do.  From Appetizers to Dessert and everything in between.  Can't wait to start using this and making lots of new things.  Perfect timing, now that Hubby is on board with this Veg thing... I'll need to be creative with food choices and this will be sooo helpful.

This Vera Bradley bag is from my MIL.  There was some confusion on the colors, but she did get the one that matches my backpack.  And it is a retiring pattern..  Its supposed to be used as a Hand Bag.  But I've never used anything called a "Hand Bag" and don't plan to at this time... Oh No!  I have changed the name to "Veg's Travel Bag"  It will perfectly hold all my toiletry items and cords and phones etc when I'm traveling.  It has pockets and more pockets, then a big center area for brush, travel size bottles and such.  I'm actually pretty excited about this one.. Especially since I have a trip coming up soon

VTech Vsmile Pocket Handheld - It's actually called "VTech V.Smile Pocket Learning System"  However, NeeNee went all over her State to find the "Vtech Handheld"... Only to find out it was called a "Pocket"...  *smile*  Poor NeeNee... But she found it and our Veg is Very happy.  The cool thing about this is that it holds all the same games he already has for his bigger Vtech System.  Which means we didn't have to buy any new games.  But it did come with a game that he didn't already have so that was a bonus.  NeeNee also bought him two more games to go with his collection.  So he is Stocked.  This little system is small enough that it is easy for travel but big enough that he can control it and the screen is easy to see.  And even better, you can plug it directly in to the TV and play off the big screen if you choose.  This will be great for traveling..  Another cool feature is for those kids that are Lefties... The controllers flip from lefty to righty with the flick of a button.  It is a VERY cool gadget! 

Silly Sentences  - This silly game was a complete surprise from another friend.  We met the other day and she surprised Veg with this Christmas Gift. 

Veg looked at it and said "AW Cool, I have one of these, but this will give me more pieces"  I just love the way he sees the positive in things.  I remember when I used to do that more often.... (note to self, get back to thinking positively about things)....

Anyway, when we got home, Veg had already started taking a part all the pieces and ran to get his similar game.  They were the same but different.  One is called Silly Rhymes.  And this new one is called Silly Sentences.  Basically for both of them you have to make sentences using puzzle like pieces.  We ended up having a lot of fun reading and making word groups all last night.  The fun part was that he could tell if he was missing a word to make a complete sentence because the puzzle pieces didn't match.  So fun and very educational...

In addition to the items above, I also got my craft organizing cubes, shown here!  and A new Vera Bradley laptop bag and some crafty supplies.  Veg has received clothes, lots and lots of toy cars, a giant Excavating Truck thing, handmade gifts, a Playmobile Nativity Set, games, and more. 

So the Holiday isn't even over yet and our house is full of stuff.  Good news is, Veg agreed to begin getting rid of stuff after Christmas.  So I think that will be a new tradition.  The day after Christmas pack up all your old things and ship them off to make room for the new.

Thanks to everyone, for so many fun and wonderful things.  I can't wait to use and play with everything....

VEGAN ICE CREAM CAKE

Ice Cream Cakes are a yearly tradition in our house, but since we are doing the no-dairy thing this year, I decided to try a Vegan Version.

Hubby said it was the best cake he's ever had and that truly is saying a lot!

I used the Vegan Cupcake Recipe but instead of cupcake tins, I used individual star shaped tins.  Then cooled the star-cakes.  And stuck them in the freezer. 

When they were cold enough, I scooped on some Vegan Ice Cream and then added another star cake to the top.  Rolled the whole shebang in some sprinkles for color (which you can't see in this picture), and stuck it back in the freezer till we were ready to eat them.

Of course I made one for Veg also because he said  "YOU CAN NOT HAVE A BIRTHDAY WITHOUT  A CAKE"

Turns out, Hubby thought this was the best Birthday EVER!  And had only good things to say!   

I must admit, those star cakes were pretty darn good!

PREPARING FOR TRAVEL

Tomorrow is another Travel day for me.  Getting on a plane of which I don't like and going to meetings that I'm not excited about.  Thinking if I have a bad attitude that it will make it not seem so bad....

Or at least that seems to be working for Hubby... he's not being so friendly today, so rather then think that he is "Just a jerk" I'm going to write this off to him not wanting me to leave.

But alas, preparation is imperative.... So I've grocery shopped, left my list of phone numbers and instructions, Prepared the morning school items, got packed and ready to leave at 5AM... Early Squirrelly, Yes Ma'am!  The house is clean (thanks to hubby helping) and the Car is washed (thanks to Veg's suggestion) so when I come home, I should have a nice transition back in to life.

I decided to make us a Vegified Baked Ziti for dinner, so they would have some left over for  couple days, along with Asparagus... yum yum.

Made Veg a Trail Mix bucket that he can dig in to when ever he wants, and some for his lunches.  Along with Trail Mix pouches for myself to take on our journey.

And yes... he asked for more Vegan Vanilla Cupcakes, of which I CAN NOT turn down... so Another batch will be going in the oven around 9:30 if all goes well.

I still have to Hide his Treasure Hunt items, (make my cheat sheet, or I will forget) ... Oh. and cut his hair, for his school pictures on Tuesday....cut his nails, his shower, my shower, Hmmm?  think that's everything, I hope!

Gonna get back to getting stuff done, so I can eat my Ziti (and maybe a cupcake or two)  Oh, and maybe catch some sleep! (NOT!!)

PRODUCTIVE TO SAY THE LEAST

In the past 22 hrs.  I have done a lot of stuff.  And I'm not talking about a little that seems like a lot, I'm talking about A REAL LOT!  But I'm not complaining, it was all good stuff. 

• Caught up on my Scrap-Book
• Up with Veg and make breakfast
• Printed over 150 pictures!  Which means every picture that was on my computer, now has a place in a pile waiting to find a place in my albums.
• Went shopping with SH to a really cool place and to a great Vegan Lunch, YUM YUM! 
• Walked a 2.2 mile trail with SH and finished up with a yummy coffee beverage
• Stopped at the health food store for Groceries then Target
• Purchased things for Veg's next treasure hunt for my next trip, along with more photo paper for my printer.  Oh, and I found a new pair of running shorts.
• Back home, I had to test my new shorts so I went for a 2 1/2 mile run, which felt great by the way.  The heat finally broke a tad and there was a nice breeze.
• Back home again, to play with Veg, read books, load 2 more CD's on my iPod

Sheewww!  And now it is 11pm and I still haven't showered PEE EWW!!!  Guess I better go do that!

BAKING TIP

While making another batch of cupcakes, I decided tiny ones would be fun.  Bite Size cupcakes make for less mess, portion control, and not to mention Veg loves them.  But... It became apparent to me while holding the giant bowl of batter and trying to pour it in to these little holes that my plan was flawed.  So I tried Spooning the batter.  Finding the perfect size spoon, but this was taking FOREVER...

So at that point the little light bulb went off in my head and said "DING DING DING"... Well, not that light bulbs really say "ding", nor would I really have a light bulb in my head... but you get the idea!

I grabbed a ziploc baggy and poured the entire bowl of batter in to the bag, then cut off the end of the bag as if I was using it for piping on a cake (not that I have ever put piping on a cake, but bare with me)  Then just squeezed the batter in to its little cups.

Talk about saving time!!  This was the coolest thing EVER!  And by the way, have I said that I LOVE VEGAN CUPCAKES!!!  yum yum yum

We went for the Vanilla cupcakes this time... So now we have done one of each basic recipe.  I'll have to start getting fancy next time and go for the Peanut Butter with Chocochips!  YUM YUM!!

MORE SCONES

Alright, I'm addicted!!!!  I don't think I can get enough of the scones!!! Tonight while making a batch, I figured I better add some healthy ingredients to offset the guilty pleasure.. So I started scanning my cupboards for things to add. 

AHA!  I found a can of organic all natural Pureed Pumpkin!  (would have been used for pumpkin pie that never came to be)  So I took a couple scoops of the creamy goodness, added it to my scone mix.. Along with extra Cinnamon & some nutmeg & choco chips.. Creating the perfect Pumpkin Spice Choco Chip Vegetarian Scone!!!  YUM YUM YUM!!!!!!!!!!!!
